The Paleo diet is quite the rage right now. I’m not a try-every-diet kind of girl, but this sounds a lot like the way I eat anyway (with the exception of meats, which I am not going to add to my diet).
According to The Paleo Diet website, this diet mimics the types of foods people ate prior to the Agricultural Revolution. These foods (fresh fruits, vegetables, lean meats, and seafood) are high in the beneficial nutrients (soluble fiber, antioxidant vitamins, phytochemicals, omega-3 and monounsaturated fats, and low-glycemic carbohydrates) that promote good health and are low in the foods and nutrients (refined sugars and grains, saturated and trans fats, salt, high-glycemic carbohydrates, and processed foods) that frequently may cause weight gain, cardiovascular disease, diabetes, and numerous other health problems. The Paleo Diet encourages dieters to replace dairy and grain products with fresh fruits and vegetables — foods that are more nutritious than whole grains or dairy products.
What I have definitely eliminated from my diet are dairy and gluten (as much as possible). Though I don’t have an allergy to either (Silver Lining), I definitely feel better for having done so.
One of my favorite sources for delish, gluten free recipes is Eleana’s Pantry. Her website is super duper and I am cuckoo about her cookbooks as well (Silver Lining).
One of my favorite recipes is her Paleo Bread. It is easy to make, really yummy and full of nutrient dense ingredients. The other day I was craving sugar (in that obscene, rip-the-kitchen-apart kind of way). Instead of pillaging the cookie jar, I had a slice of this Paleo Bread with a little almond butter and 1/2 a banana and felt soooo much better (Silver Lining).

Elena’s Pantry Paleo Bread (image above is from ElanasPantry.com)
- 1 ½ cups blanched almond flour
- 2 tablespoons coconut flour
- ¼ cup golden flaxseed meal
- ¼ teaspoon celtic sea salt
- 1 ½ teaspoons baking soda
- 5 eggs
- ¼ cup coconut oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- Place almond flour, coconut flour, flax, salt and baking soda in a food processor
- Pulse ingredients together
- Pulse in eggs, oil, honey and vinegar
- Pour batter into a greased 7.5″ x 3.5″ Magic Line Loaf Pan
- Bake at 350° for 30 minutes
- Cool and serve
