Friday's Fixin's: Pineapple Casserole

In preparing for Christmas Dinner, one thing that is an absolute must – a staple – is my beloved Aunt Maggie’s Pineapple Casserole. My oh my. Oh my.

The truth of the matter is that I don’t like pineapples. At all. Except in this recipe. And this is one of my all-time favorite recipes. Ever. I put it on the blog two years ago (still can’t believe that I’ve been writing that long!) and thought I’d share it agin for all of our new friends.

Now, let me be honest. This recipe is NOT healthy, NOT vegan, NOT organic. To be fair, growing up in the 70′s in Indiana, we didn’t know what vegan and organic even were. I’m just sayin’…

What this dish IS is DELICIOUS (Silver Lining)! More like outstanding. Amazing. I’m a big fan of special treats on holidays. And this is a Very. Special. Treat.

  1. Your Aunt Maggie's Escalloped Pineapple recipe sounds delicious and easy-peasy. I am going to make it for a Christmas Day dinner side dish. I have had escalloped corn, similar but with less sugar, and like that, so I am sure I will enjoy this. Thanks for the recipe.
