Quinoa Lemon Mint Salad
Many of you know by now how much I love quinoa. In fact, the Quinoa Arugula Salad that I posted last year is one of the most popular recipes on the blog! So, Chef Maili and I went back into the kitchen to conjure up yet another – possibly even more delicious, if that’s possible! – quinoa salad. I’m seriously love-love-loving this salad, perhaps in part because of my most recent obsession with lemon. I have been putting lemon in EVERYTHING.

Chopping the English cucumber
When it came to making the quinoa, I had never heard of toasting quinoa in grape seed oil prior to adding broth or water. This, my friends, is the key to this recipe. It makes it SING!
The mint in this salad is magical!

this looks so fresh and delicious! i've never tried toasting the dry quinoa in oil before adding the liquid, and i'd never thought to throw a lemon in either! fabulous new ideas, and the other ingredients sound just perfect to accompany it.
