You all know how much I love soup, right? Well, this Vegan Basil-Pea Soup is one of my all time favorites. Seriously delicious. The Silver Lining of this Vegan Basil Pea Soup it that in addition to being amazingly good, it is one of the easiest PEAsiest (couldn’t help myself!) soups I’ve ever made and quite possibly also one of the most delicious!
You may be asking: Soup? After Labor Day? Are you nuts? Well, maybe. But that’s not a real shocker now is it? I happen to be a firm believer that any and every season is soup season. This pea soup can be served either hot or at room temperature (kind of like a gazpacho). I prefer it hot.
Please enjoy this soup as much as we are!
The images below are how you puree soup in a blender. I’m a VitaMix girl myself.
The HUGELY important thing is prior to blending to take the lid OFF of the top. If you don’t, well, you’ll have an explosion on your hands!!
This image is from the asparagus soup that we made a couple of weeks ago, but I wanted to remind you of the visuals.
How much broth in this recipe?
Two cups. Whoospie. I'll ad that now.
Rather off the topic of soup, I love that bowl in which you photographed the soup. Absolutely gorgeous. I think you should always wear your Marie Antoinette shoes when you use that bowl.
Thanks so much, Victoria. I like that idea!
