Ohhhhh am I ever excited to share this easy peasy and absolutely delish recipe with you! These breakfast cookies are SO.GOOD. In fact, I had one before my toushy-kicking hike this morning and found myself zooming up the mountain. In addition to being yummy and healthy, they are a great energy boost (Silver Lining Trifecta).
This recipe comes from our family friend, Nora Tobin. In addition to being a professional volleyball player, trainer, author, GNC Brand Ambassador, she is kind, compassionate and generous (Silver Lining). Love her.

Nora’s Breakfast Cookies
Preheat: oven to 350 degrees
Mix:
- 2 cups rolled oats
- 1 cup apple sauce
- 1 tablespoon almond butter
- 2 tablespoon flax meal
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 tablespoon pure agave nectar
- 1/2 cup slivers of dark chocolate from an 85% chocolate bar
- Dash of cinnamon
Bake: 15 minutes
