Vegan Chocolate Pudding Recipe
Last week, we had some friends over for dinner and for the life of me, I couldn’t figure out what to make for dessert. I was hankering for something chocolate-y and sweet, but I didn’t want to rock the scale, if you know what I mean! My first thought was: chocolate pudding! After searching high and low for a recipe, I finally decided to try combining several recipes into one, which turned out to be a nice big Silver Lining!
So, below is a combo recipe combining many of my favorite things on earth. I prepped this the afternoon of our dinner party. I hope that you enjoy it as much as we did!
Vegan Chocolate Pudding Recipe
Ingredients:
- 1 ripe banana, peeled
- 3-4 tablespoons cacao powder
- 1 ripe avocado, skin and seed removed
- 2 tablespoons pure maple syrup
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup water + more as needed
Instructions: (the EASY part!)
- Blend all ingredients in a Vitamix blender until creamy. Scrape down the sides as needed to incorporate everything.
- Add more water as needed for desired consistency.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve and Enjoy!
