It has been such an incredibly fun year in the kitchen. To be totally honest, thinking about a Friday’s Fixin’s post each week is awesome motivation for me to get creative and try new things. Chef Maili Halme, Photographer Blue Caleel and I have had a great time coming up with new recipes, most of which are vegan and gluten free. For this last Friday of 2013 – can you even BUH-LEAAAAVE it?!? – I thought I’d share the top 5 Friday’s Fixin’s posts of the year.

Quinoa Salad | The Silver Pen

For some reason, Quinoa Salads tend to always be a huge hit. Is it because I put an exclamation point on the recipe, I wonder?  Hmmm…whatever the reason, this Quinoa Lemon Mint salad received rave reviews, which makes me oh so happy!

Rosemary Roasted Cashews | The Silver Pen

These Rosemary Roasted Cashews have been a hit all year long. They are so incredibly easy to make, delicious as well as vegan and gluten free (a quadruple Silver Lining, if you ask me!). I first learned about them from the nicest couple on an airplane who offered to share their snack with me. I must have been staring – and drooling as they were eating them. Whatever the case may have been, I’m never one to turn down a snack!

I did a face plant in these vegan, gluten-free Pumpkin MuffinsChef Maili came up with this recipe and my oh my oh my am I ever grateful that she did! They are so good and always curb my omnipresent sweet tooth in a very healthy way.

Roasted Cauliflower and Chickpeas with Mustard and Parsley

This Roasted Cauliflower and Chickpeas with Mustard and Parsley dish from Gwyneth Paltrow’s It’s all Good cookbook has become a mainstay in our home. I made it one day last week (because I tend to make it at least once a week) and the HOTY, Suddenly Seven and I literally ate the whole batch – as an appetizer. Oh yes, it is that good!

Simple Salmon Recipe | The Silver Pen

Though I have a strong inclination toward a vegan diet, I do love salmon and eat wild-caught salmon a couple of times a week. I was totally surprised by how deeply in love I fell with this Salmon and Tomato Ginger recipe. You see, since my bout with FBC, I consumed so much ginger that I never cared to see it again. Ever. However, this recipe is a great Silver Lining that got me back on the ginger bandwagon!

Travel Snacks

An honorable mention is The Silver Pen Travel Snacks posts that received lots of positive feedback. Boy oh boy was I ever glad that I did this one! 2013 brought extraordinary amounts of travel and this post saved my vegan, gluten-free tush on more than one occasion!
