Friday's Fixin's: Colorful Kale Salad

Last weekend I attended a wonderful celebration of the Santa Barbara FoodBank. I learned so much and was so incredibly inspired. The FoodBank of Santa Barbara county works collaboratively (love this part!) with 290 nonprofit organizations and programs to provide food and nutrition education to 164,000 people annually throughout Santa Barbara County. I’ll tell you more about the organization in a subsequent post, but for today, I’d love to share a wonderful (vegan!) recipe that was distributed at the event (Silver Lining).

In the spirit of full disclosure:  I ate my batch before I could shoot it. Yes, it’s that good!  Hope that you enjoy it as much as I did!

  1. Hmm, I love a really delish kale salad. This has my mind thinking . . . and I'm feeling some roasted beets, goat cheese and kale, maybe with some grated apple and seeds like you suggest, and some quinoa. (Clearly, I'm hungry!)

    1. Sounds delicious, Catherine. The great thing about combining veggies and grain and nuts is that you can come up with all kinds of combos. Enjoy!
