Brookside Bites: PANCAKES!

Lately, all I’ve been craving is “white” food. Sugar. Carbs. You name it.  Anything junky, I’m all over it.

Now, considering this week’s unsavory GI distress (and the subsequent weight loss accompanying it), one would think that the fact that I’m craving anything at all is a good thing. “Eat whatever your body wants,” The Husband says.  Sorry, Charlie.  I wish.

Of course, nothing about FBC is easy.

In a nutshell, cancer looooooooves sugar.  Why?  Well, because sugar feeds cancer.  (I will do a longer post on nutrition very soon.)  So, my cravings for white bread, pasta, pizza, and pancakes smothered in syrup are bad. bad. bad.

I consulted with a super dietitian in Santa Barbara by the name of Dale Figtree.  To my utter surprise, she said that if I wanted pancakes, I COULD have them.  Can you believe it?  Then she gave me her non-traditional recipe (which she generously allowed me to share with you):

Dale’s Pancakes

  1. Grind a handful of walnuts in the blender.
  2. Then add a banana and two eggs and some cinnamon.
  3. Then grill in a little olive oil and you have perfect pancakes that are actually good for you.

How great is this?  Tons of protein, potassium, good healthy calories….and YUM!

As much as I wanted to douse them with 100% pure Vermont Maple Syrup, I went with my doctor’s advice and put some organic applesauce (for the healthy calories) and cinnamon on them.  Not syrup, but a very nice alternative, I must say.

Can I tell you what a Silver Lining these pancakes have been to my day…and my life?  Our 4 3/4 daughter LOVES them.  How great is that?

I don’t think I’ll ever go back to the traditional recipe.  Why on earth would I when I have a super healthy and super delicious (reverse that order because they are soooooo good) recipe?

  2. Now I "understand" where my sudden cravings for "sweet" goodies come from!!! I am learnng so much from your posts. I have "never" in my life been a "sweet" eater preferring to stick to savoury foods … all of a sudden all I want to eat is Yes Pancakes, scones with the jam and cream and wait for a new craving … roll mops, danish herring in tomato sause and onions, pickled fish and prawns! (The norwegian blood) Thats of course when I can eat … normally live on toast and boiled eggs! giggles …. Enjoy the pancakes they look lovely!!! My SIL I have dropped 3 jean sizes … I can affort it I am a big girl! Have a lovely Day H!

  4. I've come to this party nearly a year later. I've been ready your posts for hours and forgot about lunch. Sooooo…. I'm having a late one of pancakes based on the posted recipe. I substituted pecans and a thin spread of peanut butter on 3 of them. The other 3 are cooling so I can store them away to toast another time. Thank you.
