Friday's Fixin's: Lentil "Meat" Balls

A few months ago, in order to get my noodle (i.e., brain) working after the carnage of chemotherapy, I decided to take French lessons.  I took French in high school for two years and loved it.  I think that secretly I am a francophile. Actually, I just out’d myself, so I’ll say it proudly:  I love any and all things French!

In addition to spirited cours de français, my wonderful professeur de français gave me a recèpe for boulettes de lentilles (meatless méat balls).  They are SO GOOD…and healthy (Silver Lining…Doublure Argentée!)

Because I am trying to watch my weight, I really enjoy them on a bed of arugula with a little reduced balsamic drizzled on top. They would be outrageously delish on a bed of pasta with “The Sauce“!  I hope that you enjoy them either way.

Boulettes de Lentilles
Ingredients:
  • 3 cups of cooked lentils (I like the precooked ones from Trader Joe’s)
  • 1  chopped onion
  • 1 grated carrot
  • 1 1/2 cups of oats (I use Bob’s Red Mill gluten free oats)
  • 3 eggs beaten
  • 1/2 teaspoon of ground ginger
  • salt and pepper to taste
  • 1/2 teaspoon of cumin
  • 1 tablespoon of olive oil (I love Lucini olive oil)
  • parsley (fresh)
 Preparation
  • Mix all the ingredients in a bowl and make balls or patties.
  • Either sautee the balls (or patties) in olive oil or bake them in the oven for about 10 minutes at 350 degrees.
  • You can serve them with a green salad (that is how I ate them) or with rice and tomato sauce.

  2. Looks Yummy, Hollye!! I don't cook but I hope it is easy to make. I eat lentils everyday. What kind do you get from Trader Joe's?

    I get the Irish Style Oats Steel Cut from Trader Joe's,hopefully, that will work.

    1. It is indeed yummy, Rita! I get the pre-cooked lentils from Trader Joe's. They just say "pre cooked"…
      And yes, the Irish Steel cut oats will be perfect.
      I actually use Bob's Red Mill gluten free oats just because I like to avoid gluten whenever I can.
